Better Than Oatmeal Hands Down!

1c Quinoa (when cooked)
1-2T all natural Peanut Butter
1tsp Agave
mix all together and be in heaven, if you love peanut butter please just throw your JIF in the garbage and replace it with all natural where the only ingredients are PEANUTS (: and add 2T hehehe!

Raw Kale Salad

1lb Raw Kale Rinsed
1T Lemon Juice
1-2 TExtra Virgin Olive oil
1/4c Dried Cranbarries
1/4c Pine Nuts
sea salt and pepper

Make the dressing mixture based on taste, this is such a great salad another favorite in our house!!

Breakfast and Dinner Idea


Cheddar Jalapeno Turkey Burgers
1lb Lean Ground Turkey
1/2 purple onion
1 jalapeno diced
1/2c graded cheddar cheese
1/4c egg whites
garlic pepper
sea salt

Crunchy Kale ( chris and I fight over who gets more!)
1 lb kale washed and cut with knife or scissors
I spray olive oil on it and then add a little finely graded fresh parmesian cheese
then cook at 400 for about 10-12 minutes or until crispy

Quinoa - this is a great alternative for rice high in protein and no sugar ..or I even use it instead of oatmeal too with pb of course!! follow package

mexican style omelet
egg whites- 3 or 4 per person
1 clove garlic
1/4 purple onion
jalepeno diced
salt and pepper
I spray the pan with extra virgin olive oil then add onions, garlic and pepper first then egg whites. We ate ours with yellow corn tortillas. You can add cheese too, but I tend to steer away from cheese and milk ( my tummy hates it)

Guacamole
avocado mushed up
diced tomato (small one)
4T diced purple onion
1-2 tsp lemon juice
garlic pepper

Banana Muffins

Here is a recipe for some yummy Vegan Banana Nut Muffins I like to make!!


3 very ripe bananas
1/4 cup olive oil
1 cup sugar(or I used ½ c Agave)
2 cups flour ( I used whole wheat pastry flour)
1 tsp salt
1 tsp baking soda
1 cup chopped walnuts (optional) or vegan margarine, softened
 preheat oven to 360, add all ingredients and smash bananas. Fill Cupcake tins 3/4 full ( Nixin did this for me ) and bake for 20-22 minutes

Turkey Meatloaf

If you haven't gone turkey you should! It is lighter then beef and a little better for you! Everyone makes meat loaf their own way and I am no different as I change things up depending on what i have in my fridge that night.... well tonight this is how I made it

1lb ground turkey
3-4 carrots peeled and grated on the bigger side of the cheese grater
1 zucchini grated same as above
1/2 white onion finely chopped
1 red bell pepper finely chopped
1/4c Quinoa
2 egg whites
1tb Garlic powder or 2 cloves finely chopped fresh garlic
salt and pepper

add all this together and mix well cook at 400 for 45 minutes or more depending on how loafy your loaf is (:

I paired this with mashed sweet potatoes ( because they are way better then your idaho guys!) cut and boil them and leave the skins on for the extra vitamins!! I like to add a little milk butter and brown sugar when mashing them
oh and don't forget the steamed carrots one bag peeled and chopped


Taco Soup

This is a really yummy and super easy recipe from weight watchers that I make a lot! no I am not on the weight loss program but I am pro healthy easy tasty meals!!!

1 lb ground turkey or chicken( shredded)
1can Corn
1can Ranch style Beans
1can pinto beans
1can white beans
1 can black beans
1 or 2 ( I use 2) cans tomato with green chili
1 package taco seasoning
1 package ranch dressing powder
1-2 c water ( judge your consistency to your liking)

Just brown or shred your meat depending on what you choose to use. Make sure to rinse your corn and beans (not the ranch ones) in a strainer in the sink before adding it all together. Add water to your liking and bring to a boil then set heat to med-low and cover for 20 minutes. Make some corn bread because that's just the right thing to do....

Teryaki Chicken Chow Mien

Two Bell Peppers Sliced ( I used 1 yellow, 1 red)
1/2 Head of cabbage shredded and diced
1/2 White onion
1Clove Garlic
1-2 T Olive Oil
1/2 Carton of Mushrooms Sliced
1-2c Edimomes
1c Carrots Chopped Fine
1 pkg Chow Mien Noodles Prepared as box directs( I used Aunti Kims)
1/2- 3/4c Teryaki Sauce ( I used Kikomans)
1-2 Green onions sliced
1 lb Chicken Breast
Heat olive oil in Wok, Slice chicken and cook with garlic clove until white, right as it is light pink add a little bit of Teryaki sauce to flavor. Then add all of your sliced and diced veggies and cook for a few minutes adding the remainder of the Teryaki sauce until carmel looking. Cook noodles in between they don't take long, then toss all together in the Wok.  You can really add whatever vegetables you would like, carrots, zuccini broccoli anything! The more the marrier! My kids loved it and so did we, served with Corn Bread.
